This is a great quick and easy way to jazz up some chicken, some fish or even a plate of broccoli or boiled new potatoes, for those days when you want some zing but lack the time or energy to create a complicated sauce!!
2 tbsp. fresh lemon juice
½ tsp. salt
¼ tsp. fresh ground black pepper
1 tbsp. good quality virgin olive oil
1 tsp. grated lemon zest – yellow part only not the bitter white pith.
1 grated garlic clove
1 tbsp. chopped flat leaf parsley
1 tbsp. capers – optional
Place the lemon juice in a bowl. Season with the salt and pepper. Whisk in the olive oil. Using a microplane or similar fine grater, grate in the lemon zest and garlic. Add the chopped parsley and capers.
Leave for 10 minutes for the flavour to settle, taste for seasoning and use to zing up anything that needs it. Will keep in the fridge for a day or two.
