Serves 4

 

1 tsp olive oil

1 clove garlic, crushed

1 small onion, very finely chopped

75g/3oz fresh breadcrumbs

2 pineapple rings, chopped

250g/8oz cottage cheese

Salt and pepper

Grated nutmeg

8 large flat mushrooms, stalks removed

 

 

  1. Preheat the oven 200°C/400°F/gas mark 6.
  2. Heat the oil gently in a pan and add the garlic and onion. Stir-fry until the onion is soft and then add the breadcrumbs.
  3. Stir in the pineapple and cottage cheese, salt and pepper and nutmeg to taste.
  4. Place the mushrooms in an ovenproof dish and fill each one with the stuffing. Bake for 20 – 25 minutes.
