Serves 4
1 tsp olive oil
1 clove garlic, crushed
1 small onion, very finely chopped
75g/3oz fresh breadcrumbs
2 pineapple rings, chopped
250g/8oz cottage cheese
Salt and pepper
Grated nutmeg
8 large flat mushrooms, stalks removed
- Preheat the oven 200°C/400°F/gas mark 6.
- Heat the oil gently in a pan and add the garlic and onion. Stir-fry until the onion is soft and then add the breadcrumbs.
- Stir in the pineapple and cottage cheese, salt and pepper and nutmeg to taste.
- Place the mushrooms in an ovenproof dish and fill each one with the stuffing. Bake for 20 – 25 minutes.
