Serves 4
 
1 small onion
25g/1oz nuts (almonds or other)
125g/4oz courgettes, trimmed and grated
125g/4oz carrots, grated
25g/1oz porridge oats
1 tbsp tomato puree
¼ tsp dried mixed herbs
Salt and black pepper
 
  1. Preheat the oven to 180 °C/350 °F/gas mark 4
  2. Sauté the onion gently for 5 minutes. Add the nuts, courgettes and carrots and cook for 5 minutes
  3. Stir in the remaining ingredients and spoon the mixture into a non-stick 1kg/2lb loaf tin
  4. Cook near the top of the oven for approximately 25 minutes or until brown. Allow to cool for 3 – 5 minutes before turning out and serving.
